We have in the past always traveled over Thanksgiving week. We have been to Anguilla 3 times, staying at the Cuisinart in 2007, and to Nevis once, in 2011, staying at the Four Seasons. The Four Seasons is the best resort I have been to in the Caribbean. The service is amazing. As far as beaches go, I prefer Anguilla.
